How to cook Pancit Bihon

Pancit Bihon is a popular Filipino dish. It is made with rice noodles with veggies and any type of meat. In this recipe, I cook it with marinated chicken thighs...Enjoy!  



For marinade:

1 lb chicken thigh
2 tbsp of teriyaki sauce
2 cloves of garlic
1 tsp of pepper
marinade it for at least 30minutes or overnight even better ;)

2 tbsp olive oil
2 cloves garlic
half onion
2 medium carrots (cut into julienne) 
1 cup snow peas
half of red bell pepper
2 cups cabbage
3 tbsp soy sauce
1 tsp pepper
1 cup water

A Taste of Life
Here's how:

 *Soak the Pancit bihon noodle with a look-warm water for 10-20minutes and     drain.
**Heat the pan and add olive oil. Saute' garlic and onion. Then add the marinated chicken, cook for 20 minutes and until the oil started to come out.
**Take half of the cooked chicken and set aside.
**Add carrots, snowpeas, bellpeppers and cabbage. Cook it however you like your veggies. I like mine a little crunchy and not saggy. So Probably 3-5 minutes.
**Add the soy sauce and pepper to taste ;).
*Then take it out.
*On the same pan, add 1cup water, pancit bihon noodles and the remaining cook chicken for 5-8mins. You can add more pepper if you'd like ;). 
*Then add the cook chicken veggies and cook it for 3 minutes....Enjoy!
